Sencha, a special Japanese tea variety, is obtained by first steaming carefully picked tea leaves for 15-20 seconds, then rolling, heating and drying them. The first harvest, which covers April and May, is generally known as the most delicious Sencha.
Sencha tea, which has a stronger and even slightly bitter taste when brewed with very hot water, has a milder taste when brewed with water at a lower temperature (for example, at 80 degrees).
